Ingredients
- For Salad:
- 1 C. farro cooked and cooled to room temperature (or any whole grain: wheat, rye, oat, teff, spelt, etc.)
- 1 C. wild rice cooked and cooled to room temperature
- 1 whole tart apple chopped
- 1 whole red bell pepper chopped
- 2 stalks large stalks of celery chopped
- 1/2 C. sugar snap peas chopped
- 1/2 C. onion finely chopped
- 1/2 C. Zante currants or raisons
- 1/2 C. almonds toasted and chopped (or any other type of nut)
- For Dressing:
- 1 TBSP olive oil
- 1 tsp ground coriander
- 1/2 tsp ground cardamom
- 1/4 C. lemon juice fresh squeezed (usually the juice of one lemon)
- 1/4 C. orange juice optional
- 1 TBSP honey

Instructions
- Combine all salad ingredients in a large bowl, set aside.
- Heat up juices in microwave for 30 seconds on high then stir in honey until dissolved.
- Add remaining ingredients to honey mixture then pour over salad. Mix well.
- Can be served at room temperature or chilled.
