Ingredients
- 2 C frozen corn thawed
- 1 C Tomato chopped
- 1 large red bell pepper diced
- 1 large orange bell pepper diced
- 1 large green bell pepper diced
- 1/2 C red onion finely chopped
- 1/2 C cilantro chopped (basil can be substituted)
- 2 TBSP seasoned rice wine vinegar any low acidic vinegar is fine
- 2 TBSP avocado oil or olive oil
- 1 medium lime or lemon Juiced
- 2 cloves garlic minced or grated
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp red pepper flakes or a pinch of cayenne
- Salt and Pepper to taste

Instructions
- Combine all ingredients, mix well. Refrigerate for one hour before serving.
Recipe Notes
Chopped avocado, finely shredded cheddar cheese, and/or sour cream can be used as condiments
