Ingredients
- 1 cup onion chopped
- 1 cup fresh or frozen mixed bell peppers chopped
- 1 cup frozen spinach chopped
- 1 cup frozen artichoke hearts chopped
- 2 TBS. olive oil
- 4 cloves garlic grated
- 2 cup chick peas canned or cooked from dried
- 1 tsp. black peppercorns or mixed peppercorns
- 1 tsp. salt
- 1 15 oz. can tomatoes diced
- 1/2 tsp. red pepper flakes
- 1 TBS. Italian seasoning mix
- Parmesan or Romano Cheese for topping

Instructions
- Sauté onion in olive oil over medium high heat until golden in color (about 15 minutes). Add bell peppers, cook a few more minutes. Add frozen artichoke hearts, cook a few more minutes. Add frozen spinach, cook a few more minutes. Add remaining ingredients and cook until heated through. Can be eaten as-is or spread onto cooked pasta and topped with Parmesan/Romano cheese.
