Ingredients
For Salad:

farro
cooked and cooled to room temperature (or any whole grain: wheat, rye, oat, teff, spelt, etc.)

C.
wild rice
cooked and cooled to room temperature

whole
tart apple
chopped

red bell pepper
chopped

stalks
large stalks of celery
chopped
1/2
C.
sugar snap peas
chopped
1/2
C.
onion
finely chopped
1/2
C.
Zante currants
or raisons
1/2
C.
almonds
toasted and chopped (or any other type of nut)
For Dressing:
1
TBSP
olive oil
1
tsp
ground coriander
1/2
tsp
ground cardamom
1/4
C.
lemon juice
fresh squeezed (usually the juice of one lemon)
1/4
C.
orange juice
optional

TBSP
honey
Instructions
Combine all salad ingredients in a large bowl, set aside.
Heat up juices in microwave for 30 seconds on high then stir in honey until dissolved.
Add remaining ingredients to honey mixture then pour over salad. Mix well.
Can be served at room temperature or chilled.
